On the Second Day of Christmas My True Love Gave to Me,

Two Bowls of Miso Soup,

Miso Soup with Tomato

Cooking with Oishii Anime is back this holiday season with the oh so delightful JK Meshi! To be fair the show isn't seen in the best of light and I'm pretty sure no one likes it. But I can't help to enjoy the food bits because they are simple and fun.

These directions are so silly but super cute

HAPPY BIRTHDAY TO ME!

Which anime is that delicious dish from? While I love the Read or Die OVA much more than the Series, the series still is a quality show that fans of the ova might just enjoy. More cake pictures in the series too! NOMNOMNOM!

What is that delicious dish? Coffee Cake with Coffee Frosting and Chocolate.

How do I make that delicious dish?

The Cake:

  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 cup Butter (room temperature)
  • 1 cup Sugar
  • 1/4 cup Brown Sugar
  • 3 tablespoons Coffee
  • 1/2 cup Milk
  • 2 Eggs
  • 2 teaspoons Vanilla
  • Pinch of Salt

Preheat oven to 350 degrees.

In a bowl mix: flour, baking soda, baking powder, and salt.

In a separate larger bowl mix: butter, sugars, vanilla, milk, and eggs.

Stir flour mixture into the sugar mixture until smooth and add the coffee mixing it into the batter well. Then you are ready to put the batter evenly split between 2 cake pans. Don't forget to grease your pan so it doesn't stick!

Bake for 20 minutes or until you can place a toothpick in the middle and it comes out clean.

Note: If your mixture is too dry add as much coffee as needed to moisten it up. (I always add a little more coffee anyway for more flavour)

The Frosting:

  • 1/2 cup Butter (room temperature)
  • 1 cup Icing Sugar
  • 2 tablespoons Coffee
  • 1 tablespoon Ground Coffee Bits

In a bowl mix: butter and sugar until light and fluffy.

Gradually stir in the coffee and ground coffee bits until smooth.

Note: If too runny add some flour or more icing sugar till you have the texture desired. If too dry add in more coffee or milk till you have the texture desired.

Note: Can add food colouring if you wish.

Note: Don't have to add in the ground coffee bits if you don't want to.

The Dish:

  • Place the bottom cake layer on a decorative serving plate of your choice and add as little or as much frosting as you wish on top. Don't bother with the sides yet.
  • Gently but firmly place the second cake layer on top of the bottom and frost all over until satisfied with the look.
  • Decorate the top to your liking adding chocolate or other fun items.

Note: I should have made the chocolate Happy Birthday sign by melting some chocolate on some saran wrap for an easy peel off chocolate blob then got a white icing pen to write the words. But I was lazy and just wrote it on a piece of paper 😛

Cooking With Oishii Anime 09

Everyone loves MORE CAKE for the holidays!! Merry Christmas!

Which anime is that delicious dish from? Kuroshitsuji AKA Black Butler but more specifically the S2 Specials. I watched the show forever ago so I don't really remember much about it other than it was ok. Maybe worth a re-watch someday.

What is that delicious dish? Fruit Cake.

How do I make that delicious dish?

The Cake:

  • 3 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Cinnamon
  • Pinch of Salt
  • 1 1/4 cups Butter (room temperature)
  • 1 cup Sugar
  • 5 Eggs (room temperature)
  • 1 1/2 cups Sultana Raisins (or any raisins you got)
  • 1/4 cup Dried Cranberries
  • 1/4 cup Maraschino Cherries (mixed red and green look great for the holidays)
  • 1/4 cup Candied Pineapple
  • 1/4 cup Walnuts

Preheat oven to 350 degrees.

In a bowl mix: flour, baking soda, baking powder, nutmeg, cinnamon, and salt.

In a separate larger bowl mix: butter, sugar, and eggs.

Stir flour mixture into the sugar mixture until smooth.

Now you can fold in all of your dried fruits and nuts.

Grease a loaf pan and put your mixture into it. Make sure you evenly spread it out making sure there are no air pockets.

Bake for 2-3 hours or until you can place a toothpick in the middle and have it come out clean.

Note: If your mixture is too dry after adding the flour mixture, add a little bit of milk to moisten it up but not too much.

Note: You can add any kind of dried fruit or nuts that you wish. (I added 1/4 cup of orange peel to mine)

Note: The middle might take a long time to cook. Never fear this is ok! You can place some tinfoil over the top (also helps with keeping the top from browning too much) and set your oven to cook from the top instead of the bottom 3 hours in if you wish to help speed things up.

Note: When you take it out it might be hard as a rock. Never fear yet again this is ok! Hard to cut if you want it right away but if you place your loaf into a sealed container after it has cooled off it will moisten up, be delicious, and way easier to slice!

Note: Most fruit cakes improves in flavour a couple of days after baking. MAGIC!!

The Dish:

Chop into bread like pieces when ready and EAT!

P.S. Vote in the poll on the side bar. Leave a comment here about it if you wish. If I don't get more votes I probably won't do a 365 days project next year.

Who doesn't love COOKIES?!

Which anime is that delicious dish from? Just another idol anime aimed at young girls called Aikatsu. It's ok I guess.

What is that delicious dish? Simple Sugar Cookies.

How do I make that delicious dish?

The Cookies:

  • 5 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • Pinch of Salt
  • 1 1/2 cups Butter (room temperature)
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 4 Eggs
  • 2 teaspoons Vanilla

In a bowl mix: flour, baking soda, baking powder, and salt.

In a separate larger bowl mix: butter, sugars, vanilla, and eggs.

Stir flour mixture into the sugar mixture until smooth.

Put into the fridge for an hour at the very least. Can leave in over night if you want.

When you are ready to start baking your cookies preheat oven to 350 degrees.

Clear a space on your counter and get some flour out to sprinkle over your work space. Coat a rolling pin with some flour as well. Start rolling out your dough and cut it out into fun shapes with cookie cutters of your choice. I roll my dough out to about a centimetre but you can go thicker or thinner if you want. Just make sure to watch them in the oven closely so they won't burn if they are very thin.

Bake for 10 minutes or until you can see they are done to your liking.

Note: If your mixture is too dry add a little milk to moisten it up but not too much.

Note: Sugar cookies are perfect for adding icing to so go nuts with that if you want!

The Dish:

No dish here. Remove from pan, cool on a rack, and EAT!
